Side dishes: Crunchy Potato Bits

Per person you will need:
100g white skinned potato, peeled and cubed
1 teaspoon vegetable oil
a sprinkle of salt

Pre-heat your oven to 400ºF (200ºC). Place a baking sheet with the oil in the oven and warm the oil, this will take 3-5 minutes. Quickly add in the potatoes and salt and stir around. Roast for 25-35 minutes, depending on the size of your potato pieces, or until golden and crispy.
