Quick-n-Tasty Tuna Croquettes

If you’re on any diet long enough, you may find yourself in a food rut. Today, host Michelle Koen shows you a different way of preparing two old low-fat standbys: Low-fat cottage cheese and Tuna packed in water. These Tuna croquettes are quick and easy, and simple to adapt to a low-carb version or even a different kind of fish, such as salmon!

Makes 2 patties
1/4 low fat (or regular for a lower-carb variation) cottage cheese
1 (6oz/185g) can chunk style tuna (water-packed for low-fat, oil-packed for low-carb)
2–3 scallions (spring onions) chopped
1 clove garlic (chopped)
2 teaspoons chopped basil
salt and pepper to taste

Combine all ingredients except 1/3 of the tuna into a food processor and mix until it forms a rough paste. Stir in the remaining tuna and season.

Form into 2 patties and dry-sear for 4–5 minutes each side in a non-stick pan.

Serve with a green salad or as a sandwich or low-carb tortilla filling.
