Ooh! It's a spicy little Chinese dish this week, full of protein from the humble soy bean in one of our favorite forms- Tofu!
Now, Tofu isn't everyone's cup of tea, but if you love foods from China with a nice bite to the flavor, you should definitely wrap your taste buds around some Ma Po Tofu, a favorite of Healthy Helpings TV's host, Michelle Koen!

Serves 2
11oz (300g) minced chicken
2 tbspoon soy sauce
1.5 tbspoon Chinese rice wine
1 teaspoon oil
4 scallion
2 clove garlic, chopped
2 teaspoon ginger
1 tbspoon chilli bean paste
1/2 cup chicken stock
1/2 teaspoon cornstarch
5oz/150g firm tofu
cilantro
Place 2 teaspoons soy sauce and 2 teaspoons rice wine in a bowl with the chicken and combine. Set aside.
Chop the scallions into slices and the tofu into cubes.
Heat a wok or large frying pan over a medium to high heat. Coat with a little peanut oil. Stir fry the chicken for a few minutes, then stir in the bean paste, half the chicken stock, 3/4 of the scallions, ginger and garlic and simmer until the stock reduces by half.
Combine the remaining chicken stock with the cornstarch to make a thick paste.
Stir in the tofu and cornstarch and simmer until sauce thickens and tofu is warmed through.
Serve. Garnish with remaining scallions and cilantro.
