- spray oil or butter/canola oil combination
- 1 brown onion, sliced
- 300g/ 2/3 lb beef rump strips
- 120g /4oz sliced swiss brown mushrooms
- 1/3 cup regular or low fat sour cream
- 1 tbspoon tomato paste
- 2/3 cup beef stock
- 4 teaspoons paprika
- chopped fresh parsley to garnish
Michelle served this dish with steamed brown rice, which has a nutty flavor that compliments the earthiness of the mushrooms perfectly. An alternative would be a choice like Dreamfields Low Carb pasta. Enjoy!
Saute the onions and mushrooms in a lightly oiled pan until the
onions are golden and the mushrooms start to release their juices.
Add the beef and paprika and saute for a further few minutes until
the meat is sealed.
Add in the stock and simmer, uncovered for 5 minutes, until the meat
is cooked through and the liquid has reduced.
Finally stir in the tomato paste and sour cream and bring back to
heat. Season with plenty of freshly ground black pepper and garnish
with parsley.
Serve over Brown Rice or Dreamfields low-carb pasta.
