Franco-Italian Tuna Salad on HHTV

If you love a nice, healthy tuna salad, but have grown tired of the ’same-old same-old’ then let Healthy Helpings TV and host Michelle Koen show you a a new way to make this old favorite!

Full recipe follows:

Franco-Italian Tuna Salad

1 cup (170g) broad (Fava or Lima) beans, pealed
2 tbs fresh mint
1/3 cup basil
1/2 cup arugula (rocket)
4 snowpeas (mange-tout)
1oz (30g) low fat ricotta
.3oz (10g) pecorino cheese
1/2 lemon, juiced
1 small can, chunky style tuna in olive oil
salt and pepper

Cook the beans in boiling water for 2-3 minutes, until al dente and remove skins.
Shave the pecorino cheese, crumble the ricotta and chop the herbs.
Add into a large mixing bowl with the remaining ingredients, leaving a tiny bit of oil from the tuna to help make the dressing.

Toss and season to taste.

(Enjoy with a nice crisp white wine)
