Easy, Cheesy Veggie Torte (Healthy Helpings TV)

This week on Healthy Helpings TV, host Michelle Koen prepares a very cheesy vegetable torte. Mmm, very, very tasty.
Michelle did a bit of a makeover of a traditional quiche recipe, the broccolli is really the best part as it makes a super crunchy contrast against the creaminess of the cheeses. It’s not exactly low fat but it seriously kicks butt in the protein department and is ridiculously easy to make low-carb, too.

Serves 4–6, great for lunchboxes and picnics
Ingredients:
1 teaspoon olive oil
1 leek, finely sliced
1 clove garlic, chopped
1 zucchini, thinly sliced
1 floret brocolli, chopped
3oz (100g) baby spinach
4 eggs (or 3 whole, 1 white)
1 packet (250g) light (or plain) cream cheese
1 cup (250g) low fat (or plain)cottage cheese
1 oz (30g) grated, parmesean cheese
salt and pepper to taste
Preheat the oven to 180ºC 350ºF
saute the onion and garlic in the oil until soft. If the pan gets too dry add some water.
Add in the broccoli, saute for a minute and then add in the zucchini and cook until slightly softened.
Remove the vegetables to a large bowl and combine in the baby spinach.
Spray a 20cm/8″ springform tin with cooking spray and dust with 2 teaspoons parmesean cheese.
In a second mixing bowl beat the eggs and add cream cheese, cottage cheese and almost all the remaining parmesean. Stir to combine, season, then add in the vegetables.
Spoon the mixture into the springform tin and level off. Sprinkle with remaining parmesean. Place the springform tin on a flat baking dish to catch any drips and place in the oven for about 40 minutes or until golden brown. Cooking times will vary depending on the moisture content of your cottage cheese.
Remove from oven and allow to cool for 30 minutes and then chill in the fridge for several hours to ensure the dish fully sets.
