Fast food doesn’t have to be greasy and fatty! This week Healthy Helpings TV’s host Michelle Koen revisits a childhood memory of growing up in Belgium, where Mussels were commonly available for drive-through take away, to show you the other side of fast food.

Mussels are a delicious finger food which can be flavored a million different ways. In this episode, we’ll show you a slight variation on a traditional French recipe, but you could try making your mussels with all sorts of different flavours. Serves 2

1kg/2lb mussels, cleaned and de-bearded
1/2 cup dry white wine
1/4 chicken broth/stock or water
125g/4oz roughly chopped swiss brown mushrooms (regular will do in a pinch)
1 large scallion (spring onion) or leek (white part only), sliced
1 bunch coriander (cilantro), washed. Use half the leaves and all the roots
1 tablespoon light cream (optional)
1 small chilli (Michelle used an Aurora) or peppercorns

Combine all ingredients except the coriander leaves and cream in a wok.

Cover and simmer for 5 minutes.

Remove all the mussels which have opened to a serving bowl. Return the lid and simmer for a further minute to open any remaining shells. Remove remaining mussels to serving bowl.

Remove wok from heat. Stir in cream, if using, into liquid and ladle the liquid over the mussels.
