Chillin with Chicken Chili on Healthy Helpings TV!

This week on Healthy Helpings TV, host Michelle Koen heads south of the border, drawing on some mexican influences to create a mouth watering and quick chicken dish!
This dish incorporates bell peppers and mixed beans to provide a
delicious source of fiber, a combination of different beans and chicken for added protein, and wonderful flavors such as Cumin and Cilantro for a fresh, yet earthy taste.

Ingredients:
1/2 teaspoon ground cumin
spray oil
1 small onion, chopped
1 green capsicum/bell pepper, sliced
1/2 green chili, chopped
1 clove garlic, finely chopped
300g/10oz skinless chicken breast fillet, cubed
1/2 can 5 bean mix
1 cup (maybe a little less) chicken stock
2 teaspoon flour or low-carb thickener of choice
juice of 1 lime
1–2 scallions/spring onion, chopped
1 bunch cilantro/coriander chopped/torn (including roots)
1/4 cup regular or light mozzarella cheese
How it’s done:
Dry toast the cumin in a large pan for 30 seconds until fragrant.
Spray or drizzle in some oil and saute the cilantro root, bell pepper, onion and garlic until the onion becomes translucent.
Add in the chicken and cook until outsides are just white.
Add in the lime juice and stock and simmer for 5 minutes or until chicken is just cooked through.
Add in the beans and flour and allow to simmer and thicken slightly.
Stir through the cheese and allow to melt.
Serve with topped with scallions and cilantro leaves.
This dish can be served over basmati rice, any cooked whole grain, or a low-carb pasta (serves 3-4) or even on its own! (serves 2).
