Ingredients:
300g/10oz Chicken Breast Fillet cut into large strips
1 tablespoon flour mixed with a little salt and pepper
1 can (400g/14oz) whole peeled tomatoes
1 teaspoon (5g) butter
1/2 teaspoon olive oil
1/2 onion, roughly diced
2 clove garlic roughly chopped
1 tablespoon red wine vinegar
90g/3oz Kalamata olives (weight includes pits)
1 tablespoon (15g) capers
1 cup, roughly chopped, flat leaf parsley
2 tomatoes roughly chopped (optional, only if they taste great!)

Pre-heat a skillet and a griddle pan.

Using a rolling pin flatten the chicken peices until they are about
5mm (1/4 in.) thick. Lightly dust the chicken in the flour and set aside.

Roughly chopped the tinned tomatoes, reserving the liquid.

Melt the butter and oil in the skillet and saute the onions until
caramelized. Add the garlic and cook for a further minute. Making
sure the onions are fully cooked add in the red wine
vinegar.Immediately add the tinned tomatoes, stir and simmer for 10
minutes until the sauce reduces and thickens. Add liquid from can if
desired.

Cook the chicken in batches until golden each side making sure the
pan is on a very high heat.

When you have started to cook the last bits of chicken quickly toss
the remaining ingredients except the parsley into the sauce and stir
to warm through.
Just before serving stir in the parsley to the sauce.

Serve the sauce over the top of the chicken.

This sauce works great for all sorts of dishes; as a pasta sauce, a
pizza sauce or even a topping for meatloaf.
You may choose to substitute veal or white fish for chicken in this
recipe.
