Chicken burgers: Flavors of Asia (Episode 1)

Serves 2
Chicken ‘Burgers’
1/2 inch piece ginger, grated
.3lb (150g) ground chicken breast (if you can’t buy this, use a food processor to make your own)
1 tablespoon chopped fresh cilantro (corriander)
1 finely chopped fresh green chilli
3 chopped scallions (spring onions)
1 tablespoon sweet chilli sauce
1/2 tablespoon fish sauce
1/2 cup grated carrot (low carbers use brocolli-slaw)
1 cup chopped lettuce or baby spinach
1 sliced tomato
2 tablespoon sweet chilli sauce
2 wholegrain bread rolls/ 2 low carb tortillas
Preheat your grill, griddle or saute pan.
In a large mixing bowl combine all the burger ingredients and mix together with your (clean) hands. Form the mixture into 2 pattles.
Lightly oil or spray your griddle pan. Place the patties in the pan and cook for about 5 minutes each side, turning once.
Assemble with remaining ingredients. To halve the carbs and the calories you can use a low-carb flour tortilla.

109 Calories, 2.0g fat, 5.5g carbs, 18.1g protien, 1.1g fibre

The burgers sound delicious! I’ve been seeing lots of recipes with ground chicken in them recently - must be a trend - but the stores haven’t caught up with the trend and I don’t find ground chicken. I *do* have a machine to do this myself, though, and now that I’ve seen your recipe I might do that.
One question - I usually add an egg to my ground meat to keep it from falling apart after it’s cooked, and it looked like that might’ve been a problem for you. Would that affect the health value of the burger?

Hi Barb,
I almost never add egg when making my patties. if the mixture doesn’t stick together just add a little more sweet chilli sauce. If you’re doing patties with beef use tomato ketchup as you’re binding agent (along with chopped capers, minced shallot and lots of fresh parsley and oregano).
Ground chicken is still quite hard to find here in South Australia too but cultivating a good relationship with a local butcher is handy in these situations.
I’ll certainly see what I can do with adding a comments feed link.
