Per person you will need:
100g white skinned potato, peeled and cubed
1 teaspoon vegetable oil
a sprinkle of salt

Side dishes: sauted zucchini

2 small zucchini (courgettes) cut into match sticks
2 teaspoons lemon-tyme chopped
1 clove garlic finely chopped
1/2 teaspoon olive oil
Combine all ingredients in a small non-stick saute pan and cook over a medium to high heat for 5-7 minutes or until golden.
If you don’t have lemon time some lemon zest and regular thyme will do the job.
