Beetroot Brownies Can’t Be Beat! (HHTV)

Chocolate brownies and cakes are the kind of thing anyone on a health kick passes up, but not anymore thanks to the humble beet. Today, Healthy Helpings TV’s host Michelle Koen shows how to make a scrumptious and decadent-tasting chocolate brownie that is far healthier (and tastier) than a box mix!

These brownies have 25% less calories, 15% less fat and 30% of the sugar (!) found in a regular brownie and thanks to the beet and wholewheat flour, almost 3 times the amount of fiber! That’s all very well, but how do they taste? These babies are soft and delicate to the mouth and have seriously rich, earthy, dark chocolate taste. Move over red velvet cake, there’s a new tempting dessert flavor in town!

Beetroot Brownies
Makes 24 brownies

40g dark chocolate (I used 63% cocoa)
1/3 cup (80g) butter
3 eggs
1 egg white
1/2 cup (75g) brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
4 tablespoons (50g) whole wheat flour
4 tablespoons (50g) plain flour
1/3 cup (40g) unsweetend Cocoa Powder
3/4 cup+1 tablespoon (100g) ground almonds
250g raw beet, peeled and grated
3 rounded teaspoons (5.5g) granulated instant coffee

Preheat oven to 350ºF (180ºC)

Melt the chocolate in a large mixing bowl and allow to cool slightly. Add in the butter, eggs and sugar and beat together in a large mixing bowl.

Sift the dry ingredients into a separate mixing bowl and combine.

Place the dry ingredients and the beetroot in to the wet ingredients and mix to combine.

Spray a brownie tin with cooking spray and spread the batter in the tin. Bake for about 25 minutes or until a knife comes out clean. Allow to rest for 5 minutes then cut into 24 squares.

If you find that the brownies aren’t sweet enough for you, mix 1 teaspoon of warm honey with 2 tablespoons of natural orange juice and brush on as a glaze. (Adds 1.3cals and 1/3g of carbs per brownie)

Brownies are freezable.
